The Challenge
Copper & Vine runs three dining rooms with three very different personalities — a lively downtown flagship, a riverside patio favorite for date nights, and an intimate 12-table uptown room — but its website treated them all like a single static brochure. Reservations were handled through a clunky third-party widget that didn't share availability across locations, so hosts were manually double-checking phones for walk-in conflicts most weekend nights.
The bigger miss was on the table itself. Copper & Vine's wine director had built a genuinely excellent 400-label list and trained every server on pairing philosophy, but almost none of that expertise made it online. Diners browsing the menu at home had no way to explore pairings before they arrived, and servers were re-explaining the same recommendations dozens of times a night during the rush. Meanwhile, the group's guest-services line was fielding a steady stream of repetitive calls — gluten-free options, allergy questions, private-event availability — that pulled staff away from the floor.
Ownership wanted the website to feel like an extension of the dining room itself: warm, knowledgeable, and able to make a real recommendation, not just take an order. It also needed reservations to work identically whether a guest booked through the website, called in, or walked up.
Our Solution
We rebuilt the site on Next.js with a shared reservations layer so all three locations read and write against one real-time availability system — no more phone-checking between hosts. The booking flow itself keeps date, time, and party-size selection simple, but every confirmation now flows into the same backend the front-of-house team uses on the floor.
The centerpiece of the rebuild is the AI Sommelier, a pairing recommendation panel that sits alongside the menu. When a diner selects a dish, or types a preference like "something lighter and fruity," a recommendation model trained on the wine director's actual pairing notes — cross-referenced against tasting-note embeddings stored in a vector database — suggests a specific bottle or glass and explains the reasoning (body, acidity, how it plays against the dish's dominant flavors) so it reads like a real recommendation, not an algorithmic guess. Servers now use the same tool tableside on tablets, cutting down repeated pairing conversations.
Alongside it, we built an AI concierge chatbot, powered by a LangChain pipeline connected to each location's live menu data, allergy/dietary tagging, and the shared reservations system. It handles routine questions (gluten-free options, allergen flags, hours) and can complete an entire booking end-to-end, including special requests like a window seat, without needing a host on the other end.
We also added a locations hub with real-time hours and a private-events path, so larger parties can inquire without going through the main reservation flow.
The Impact
In the first full quarter after launch, online-originated reservations rose sharply and no-show rates dropped as the concierge bot began sending automatic confirmations and reminder nudges. The AI Sommelier is now used on roughly half of all online menu sessions, and average wine-and-food attach rate per table climbed noticeably compared to the pre-launch baseline. Guest-services call volume for routine questions dropped enough that staff time was reallocated to private events. Copper & Vine is now discussing a version of the Sommelier for an upcoming fourth location's opening.
